Copenhagen
The undisputed Scandinavian capital of style, sustainability, and New Nordic cuisine. Copenhagen charms with pastel-fronted Nyhavn harbor canals, cycling superhighways, royal palaces, and warm 'hygge' candlelit bistros.
My 3 Weeks Here
From the moment I stepped into Hotel d'Angleterre—Copenhagen's grande dame hotel overlooking Kongens Nytorv—I was swept into a world of understated Nordic luxury. A bouquet of fresh white orchids, chilled Ruinart champagne, and Danish butter cookies greeted me in my spacious suite.
I picked up an elegant Christiania city bike and joined the seamless flow of chic Copenhageners pedaling down the canal bridges. My first stop was Nyhavn, where 17th-century townhouses painted in vivid shades of ochre, cobalt, and cranberry reflect in the canal waters. We stopped at Atelier September for breakfast: toasted sourdough topped with creamy avocado, chives, and flaky sea salt, followed by a warm cardamom bun that melted on the tongue (165 DKK).
In the afternoon, I visited Rosenborg Castle, strolling through the King's Garden before heading down into the palace treasury to gaze upon the sparkling Danish Crown Jewels. Afterwards, we explored Torvehallerne food hall, sampling open-faced smørrebrød sandwiches from Hallernes Smørrebrød—pickled Greenland shrimp piled high with homemade mayonnaise, lemon, and dill on dense dark rye bread.
As dusk approached, we rode over to Tivoli Gardens, the 1843 amusement park that inspired Walt Disney. Illuminated by thousands of fairy lights and lanterns, it felt like a magical Victorian wonderland. Dinner was the centerpiece of my trip: a 16-course New Nordic tasting menu at Geranium, Rasmus Kofoed's three-Michelin-starred masterpiece on the 8th floor of Fælledparken. Courses featuring fermented winter greens, king crab, and delicate pine broths proved why Copenhagen remains the culinary capital of Europe.
